With my PALEO diet in full swing, it is important to plan ahead and make quick meals for the go! My amazing wife spent sometime getting me all set for the week!
I'm always looking for healthy snacks that I can bring to work because when 3 o'clock comes around, I'm starving. If I don't have something near I usually will end up snacking on something thats not so good. These egg muffins are not only great in the morning but also to bring with you for a mid afternoon snack. The best part is that they are so easy to make and can be customized easily. The recipes we used are below but like I said, almost anything works in these! We cooked up a package of Trader Joes chicken breakfast sausage & a package of bacon and put one or the other in all of the muffins. We also sauteed a package of mushrooms and an onion together. Just pour a little bit of the egg mixture in the muffin tin, add the ingredients you like and then pour more of the mixture on top, leaving about 1/2 inch from the top. You can get creative here, almost any ingredient would work. Bake @ 350 degrees for 20-25 minutes (or until done).

I usually go with my lower abdomen when thinking about where to put my sensor each week, but also wanted to try out other areas that a few readers suggested awhile back, and wanted to give my stomach a break. It's currently in the back area of my arm and so far it seems to work pretty good. It isn't as accurate as when it is on my stomach, but much much more comfortable.
I am not one to go to the doctor much, except to get my blood work done. Well, mostly just to get my A1C checked but last year I still had money in my flex budget for healthcare expenses, so I thought I would try an at home A1C kit. It comes with two tests and I think it was roughly $30, so depending on co-pays and lab fees, it might be well worth doing it at home. Also, it is only a regular finger stick versus having blood drawn.
How many times have you heard to limit your fat consumption to help prevent heart disease? I'm sure a million times, AND, I'm sure you have also heard that you need to eat the "Right" kind of fats, you know, the "Good" kinds. PWD need to obviously pay close attention to heart health, but in all honesty, I only semi-understood that statement. That being said, I want to help call out the importance of omega 3 fats, which are definitely one of the good kinds. The best supplement to get your omega 3 from is Fish Oil or Crill Oil because they both contain EPA and DHA. See below for a couple options that I got at Costco and I'll describe the benefits I have found below:
Moving to another country can be difficult if you don't know anyone, which my wife and I didn't, but Crossfit is definitely a great community. I have been trying to get to a class 2-3 times a week and it really helps that my company will cover 2 of those. Really awesome. I have been noticing my blood sugar levels stay much more consistent throughout the day when I have been working out. However, I am still seeing some real HIGHS when I am done with my WODs or "workout of the day", which has led me to be more proactive to injections immediately post workout.
This is the quick and dirty on my diagnosis and evolution of treatment. I was diagnosed at the age of 17 while going to the doctor to get results of a neck x-ray from a football injury. I was a couple months away from being 18 and insisted to my mom to be able to go to the doctor by myself for the first time. As I mentioned to the doctor my insane thirst and frequent urination, he order the nurse to check my blood sugar, which struck me as odd. Didn't really have any idea why? As the nurse showed the doctor the results with a puzzled look on her face, he told her to check it again. As she did, she got the same result - "HIGH". Side note - "Well hello there to you too my new side kick, blood glucose monitor, that will not leave my side for the rest of my life."

Sorry for the lack of posts recently, I'll try to be better with my posts. Moving our lives to another country brings a lot of unexpected hoops to jump through and tons of paperwork. Also, starting a new job on top of that takes priority and focus.
Not only did I start a new job, I also signed up to become a Crossfit Level I Trainer and my course was last weekend, the day after we moved into our new house. Life was in boxes, but it has been a goal of mine for sometime now. I had signed up to take the Level I Crossfit course months ago and didn't know it would come the same weekend as moving into our place. The course was from 9a-5:30p both days, followed by a written test. Just found out yesterday I PASSED and am now A CROSSFIT LEVEL I TRAINER! Great quote I came across today while reading up on a Crossfit nutrition guide by Dr. Uffe Ravnskov. His quote is about nutrition, but can apply to all parts of your life! Become an active participant in life. Maintain an active thought process. Make your own decisions. Learn from your own experiences! After a lecture, a journalist asked how she could be certain that my information was not just as biased as that of the counter campaign. At first I didnt know what to say. Afterwords I found the answer. We are always testing out interesting new recipes we find on Pinterest. The other day we came across some cookies that were gluten-free and did not contain any grains and actually looked good, so we tried 'em. Peanut butter cookies with seriously only 4 simple ingredients?!? We were completely surprised when we ended up LOVING them! Plus, the recipe says it only has 36 calories per cookies..can't beat that for a sweet treat. [Note: these do not contain cane sugar, but plenty of honey for sweetening that will certainly raise blood sugar levels]
Ingredients: 1 Cup Peanut Butter 1 Cup Honey 1 TSP Baking Soda 1 Egg Optional - Add some Cacoa (or coco) powder to add chocolatey flavor. It also adds some thickening to consistency. Mix the peanut butter + honey first, then add an egg and baking soda. You can either try to put them in sloppy balls like cookies or spread the mixture all out on a cookie sheet. Bake for 10 minutes on 350 degrees. They’re delicious & soft! .... a healthier version of peanut butter cookies :) Enjoy! So this post is coming a bit out of left field, but certainly does have some relevance to events that have been in the news recently. Also, because I went to a new Crossfit gym here in Vancouver and I could hardly get out of bed this morning, but my blood sugars were spot on. As most know, Lance Armstrong has finally come clean (somewhat) to the allegations he was "doping" & used performance enhancing drugs while professionally competing. There have also been many MLB players that have been under investigation for the use of banned substances. The most common thought for people is steroids. Well, yes the majority of the time they are taking steroids but usually it's coupled with other substances. There are numerous ways you can enhance your physical performance, which most people aren't really aware of, well, at least I was not. I wouldn't have thought about doing blood transfusions during any of my physical competitions. Also, I am sure most people would not associate INSULIN as a performance enhancing drug either!
Yes, I know I have some rather interesting jumping abilities and strength to size ratio, so for those of you that may have suspected, I am coming clean. I MUST ADMIT, I HAVE BEEN USING PERFORMANCE ENHANCING DRUGS FOR OVER 10 YEARS!!! INSULIN!!! hahah |
