Here is a little treat for your Friday evening... baked apple slices. I know it isn't your typical (high calorie) apple crisp recipe, but trust me, it is still really tasty! This is gluten & dairy free if you use Earth Balance instead of butter. Just a warning for PWD, this will still raise your blood sugar so measure out agave nectar/honey & apples to get correct carb count. Ingredients:
One apple per person cinnamon, to taste 2 Tbsp. honey or agave nectar. 2 Tbsp. Butter (we used non-dairy Earth Balance) almonds, optional (walnuts would also work), soaked and dehydrated then roughly chopped Directions: Cut the apples into thin slices and place in a glass baking dish. Spread out evenly. Sprinkle with cinnamon (did ya know... cinnamon helps stabilize your blood sugar too?!) Drizzle honey/agave nectar on top of the apples. Add the chopped nuts (optional, of course). Lastly, add little bits on butter or Earth Balance on top of the apples. Cook in a 350 degrees in the oven for 20-30...If you like the apples a little crispy then go on the shorter end of the time, if you like them soft, bake a tad longer...ENJOY!
